Wendy’s Éclair Cake
Ingredients
3 c. milk
Two small boxes French Vanilla Instant Pudding
12 oz. Cool Whip
Two boxes Graham Crackers (or one Family Size box)
1 ½ square unsweetened baker’s chocolate (may be three pieces)
1/3 cup margarine or butter
1 ½ c. powder sugar
1 egg
1 tsp. vanilla
Instructions
Mix first three ingredients in a bowl.
Cut crackers to fit the bottom of a 9”x13” pan.
Pour half of the pudding mix on top of crackers.
Add another layer of crackers.
Pour remaining half of pudding mix on top of crackers.
Add one more layer of crackers. Try not to have gaps between crackers for this layer.
Melt margarine and chocolate in a pan on the stovetop. Pull from flame and add the powder sugar, the vanilla and the egg. Carefully spread the chocolate to cover all crackers.
Cover and refrigerate overnight.
Tabitha’s Holiday Cranberry Moscow Mule
Ingredients
2 oz – Vodka
1 ½ oz – cranberry juice
½ oz – fresh lime juice
2 oz – ginger beer (NA)
Garnish (optional):
Sugared cranberry skewers
Sugared orange slice
Lime wedge
Instructions
Combine all ingredients and serve over ice.
